German Spaetzle Dumplings
(Serves 6)
Ingredients:
½ cup milk
2 eggs
½ tsp. ground nutmeg
1 pinch ground white pepper
½ tsp. salt
2 tsp. butter
2 tsp. chopped parsley
Preparation:
- Mix flour, salt, white pepper, and nutmeg.
- Beat eggs in a separate bowl, and add to the dry ingredients with the milk
- Mix until smooth.
- Press dough through spaetzle-maker, or a large holed sieve or metal grater.
- Drop a few spoonfuls at a time into simmering liquid.
- Cook 5 – 8 minutes. Drain well.
- Sauté cooked spaetzle in butter and sprinkle with chopped parsley

Could you make this with soy or rice milk?
