German Spaetzle Dumplings

(Serves 6)


1 cup all-purpose flour

½ cup milk

2 eggs

½ tsp. ground nutmeg

1 pinch ground white pepper

½ tsp. salt

2 tsp. butter

2 tsp. chopped parsley


  • Mix  flour, salt, white pepper, and nutmeg.
  • Beat eggs in a separate bowl, and add to the dry ingredients with the milk
  • Mix until smooth.
  • Press dough through spaetzle-maker, or a large holed sieve or metal grater.
  • Drop a few spoonfuls at a time into simmering liquid.
  • Cook 5 – 8 minutes. Drain well.
  • Sauté cooked spaetzle in butter and sprinkle with chopped parsley
