Lori’s Ultimate Classic Chocolate Truffles
Ingredients:
¼ lb. unsalted butter (1 stick)
3 cups confectioner’s sugar
4 oz. Baker’s unsweetened chocolate (4 squares)
3 Tbs. Instant espresso powder (or strong coffee)
1 Tbs. water
3 Tbs. rum
Cocoa powder
pinch of salt
Preparation:
- Cream butter and sugar until fluffy
- In a double boiler of microwave, melt chocolate with the water, rum, coffee, and salt
- Beat slowly into butter and sugar mixture, cover, and refrigerate for at least 30 minutes
- Roll truffles by cutting small chunks or rolling them with two spoons and roll in cocoa powder to cover
- Refrigerate until serving
